Mojo picón o mojo rojo

  • 3 garlic cloves

  • 2 units of pepper picona

  • A teaspoon os sweet pepper

  • ½ teaspoon cumin

  • 250 ml of olive oil, mild flavor

  • 50 ml white vinegar 

  • Coarse salt to taste

Preparation: Clean the pepper piconas of seeds if you prefer it not too spicy. Peel the garlic and cut into pieces. Introduce the peppers and garlic in the mortar. Crush until it is quite reduced. Add oil, paprika, cumin and vinegar. Stard kneading the ingredients until a homogeneous paste is obtained.
